 | Cortney Viglietti General Manager - Miss Cortney Viglietti, born and raised by Italian
parents comes to Elfo's with much to offer. Working
in the restaurant business is a passion of Cortney's.
At the age of 15 she began her career with the Day
family at the Butcher Shop. Her dedication and strong
work ethic lead her to her present position with the
Grisanti Family Restaurants.
Cortney has been instrumental in establishing Elfo's
catering service and she works collaboratively with
many businesses and organizations in the Memphis area
coordinating fund raisers and other local events.
Cortney involves many local artists displaying a
myriad of art from all genres, and silent auctions are
periodically held at Elfo's after hours.
Elfo's is a family run business with strong community
ties that Cortney is excited to be associated with and
looks forward to many years of working with such an
elite establishment.
Cortney plans to graduate with a degree in Business
Marketing from the University of Memphis. |
 | David Cleveland Head Chef - David's first experience in the food industry was as a food stylist under the tutelage of parents Al Clayton (food photographer), and Mary Ann Clayton (food Stylist) in Atlanta, GA. This involved early exposure to different foods and preperation styles and sparked interest in developing culinary skills. He went on to work in various ethnic styles; south western (Sierra Grill, Atlanta), middle eastern (Rapheedie's, Atlanta), Italian (Pasta da Pulcinella, Atlanta), among others. While at PulcinellaDavid found a love and penchant, for Italian cuisine. He then went to Cortona, Italy and worked for a few years at La Casina dei Tigili, came back to Atlanta to work at Terra Cotta, a cross cultural bistro. This reignited his interest in multiethnic themes in fine dining. After absorbing much knowledge and experience, David moved on to Memphis, TN where he found employment at Chez Phillipe (a blend of French and Southern America cuisine). In 1998 David got on board with the Grisanti team for the better part of 5 years. After a brief hiatus to Cafe Society, the Elfo's project came about. David was perfectly suited to lead the charge with his base Italian roots and accents of multiculturism. |
